What Are The Grades Of Cashew Kernels Based On?
The Raw cashew nuts after being processed into Cashew Kernels will be graded. In Viet Nam cashew industry grades cashew nuts based on the following cashew nut quality standards below:
- The Association of Food Industries of New York (AFI’s),
- TCVN 4850: 2001 – Vietnam cashew nuts kernel and technical request,
- Combined Edible Nut Trade Association (CENTA), UK and
- Grade specifications as followed by the CEPCI

AFI classification of cashew kernels:
- First Quality Fancy Uniform kernel color that is white, light yellow, or ivory in color.
- Second Quality Scorched – Kernels that are yellow, light brown, ivory, and light ash-grey in color.
- Third Quality Special Scorched – Kernels that are deep yellow, brown, amber, and light to deep blue in color. They may be slightly shriveled, light-brown speckled, blemished, or otherwise discolored.
- Fourth Quality – Kernels would qualify as First or Second Quality, except that they have pitted spots.
- Dessert – Kernels that may be scraped, deeply scorched, shriveled, deep-brown-speckled, black-speckled, blemished, or otherwise discolored.
UNECE classification of cashew kernels:
- Extra Class – Kernels that are white, pale ivory, pale ash-grey, and light yellow in color.
- Class I – Kernels that are light brown, light ivory, light ash-grey, deep ivory, yellow, and are scorched or lightly blemished.
- Class II – Kernels that are light brown, amber, light blue, deep brown, deep blue, discolored, black-spotted, immature, shriveled, blemished, and stained kernels are permitted.
CEPC classification of cashew kernels:
- White Wholes (W)– White, pale ivory, or light ash in color.
- Scorched Wholes (SW)– Slight brown color due to longer roasting.

TCVN 4850: 2010- Vietnam Cashew Nuts Kernel and Technical Request!
Standard on cashew nuts TCVN 4850:2010 – Vietnam cashew grades is a version of Vietnam’s cashew classification standard released in 2010 compiled by Import-Export Inspection Joint Stock Company, proposed by the Ministry of Agriculture and Rural Development. recommended, appraised by the Directorate for Standards, Metrology, and Quality, and announced by the Ministry of Science and Technology. Standard TCVN 4850: 2010 applies to cashew kernels, which have been preliminarily processed from the fruit of the cashew tree (Anacardium occidentale Linnaeus) for food processing.
