Spicy stir-fried cashews are a simple but flavorful snack. The rich, buttery taste of cashews goes very well with mustard seeds, curry leaves, chili flakes, and chili powder. This dish is crunchy, aromatic, lightly spicy, and perfect for serving as a snack or appetizer.
Ingredients for Spicy Stir-Fried Cashews
- 400 g raw cashews
- 10 g mustard seeds
- 6 g curry leaves
- 5 g chili flakes
- 10 g chili powder
- Ghee or cooking oil
- Salt, to taste

How to Make Spicy Stir-Fried Cashews
- Preheat the oven to 150°C.
- Spread the raw cashews evenly on a baking tray. Roast them for about 15 minutes, shaking or stirring the tray halfway through so the cashews cook evenly.
- Roast until the cashews turn lightly golden, then remove them from the oven and let them cool.
- Add ghee to a frying pan and heat it over high heat. Once the ghee melts, add the mustard seeds.
- Cover the pan for a few moments because mustard seeds may pop out while heating.
- When the mustard seeds start to pop, add the curry leaves. Stir for about 30 seconds, making sure they do not burn.
- Add the roasted cashews and a small pinch of salt. Stir well for about 3 minutes. The cashews should become fragrant and slightly toasted, but avoid burning them.
- Add the chili flakes and toss quickly. Remove the pan from the heat immediately.
- Sprinkle in the chili powder and the remaining salt. Toss again until the cashews are evenly coated.
- Serve immediately while warm, or let the cashews cool completely and store them in an airtight container.
Serving Tips
These spicy stir-fried cashews are best enjoyed warm, but they also make a great crunchy snack when cooled. You can serve them with drinks, add them to a snack platter, or use them as a topping for salads and rice dishes.
For a lighter version, reduce the amount of chili powder. For a stronger flavor, add extra curry leaves or a little black pepper.
