India Steps Up the Development of Wine Made from Cashew Apples
Officials said the long-running efforts of the Kerala State Cashew Development Corporation (KSCDC) in India to set up a cashew apple wine production unit are now in the final stage. The project is expected to launch finished products soon to serve both domestic and international demand.

What Is Cashew Apple Wine?
In India, alcoholic drinks made from cashew apples are often known as Feni, or more specifically Cashew Feni. This drink is distilled from fermented pure cashew apple juice, without adding unnecessary impurities.
On average, 1 kg of cashew apples can produce around 550–600 g of cashew apple juice. The juice can then be fermented into cashew wine with an alcohol content of about 6–12%, or further processed into stronger spirits.
Cashew apple wine, also known in English as Cashew Feni, is a traditional countryside spirit, especially well known in Goa, India. It is valued for its unique aroma, fruity taste, and cultural identity.
After the juice is pressed from the cashew apple, the remaining fibrous pulp can still be used. It may be turned into animal feed, dried, or processed into cashew apple fiber biscuits.
One important challenge in making cashew apple wine is the fruit’s natural astringent taste. This astringency comes mainly from tannins. Removing or reducing tannins has a big impact on the final flavor of the wine. Simple methods include using egg whites, gelatin, or calcium hydroxide Ca(OH)2.

Moving Toward Premium Cashew Apple Wine
The Kerala State Cashew Development Corporation is working to develop different alcoholic beverages made mainly from cashew apples. The aim is to position these drinks as premium products and create more value for the state’s cashew sector.
However, there are still several barriers. In some Indian states, alcohol production and sales are restricted. Even so, Kerala has a relatively high per-capita alcohol consumption rate, so cashew-based alcoholic drinks are expected to receive strong interest from consumers who enjoy local spirits and specialty beverages.
The larger goal of the project is not only to create a new product line, but also to support the recovery of Kerala’s cashew industry, create jobs, and improve income for local cashew farmers.

Converting a Cashew Processing Factory into a Wine Production Unit
If the cashew apple wine market shows strong potential in the coming period, the Kerala State Cashew Development Corporation plans to convert its cashew processing facility in Vadakara into a dedicated cashew wine production unit. The facility sits on nearly three acres of land.
Mr. Jayamohan added that the districts of Kannur and Kasaragod account for more than 65% of the state’s total cashew-growing area. This makes the region suitable for securing a stable supply of cashew apples for wine production.
